Our dough is created using a combination of our sourdough and poolish then slowly aged for 72 hours using Organic Central Milling flour, Sicilian sea salt, and mineralized reverse osmosis water. We hand mill all of our fresh packed California tomatoes for the right consistency daily. We use a blend of California and Wisconsin whole milk mozzarellas. We bake our pizzas at higher temperatures for the perfect balance of char, crisp, and tenderness.
